TOMATO HOT AND SOUR SOUP
Serves: 4-5
Cooking Time: 15 min.
Ingredients
4 large tomatoes
50 gms shredded chicken pieces
50 gms cottage cheese
1 ltr chicken stock
1 1/2 tbsp soya sauce
1 tbsp cornflour
3 tbsp water
1/2 tsp white pepper
1 tbsp vinegar
salt to taste
Method
Blanch the tomatoes and remove the seeds by straining. Make puree.
Bring the chicken stock to a boil.
Add the tomato puree and chicken shreds to the stock and cook for 5 minutes.
Add the soya sauce, vinegar and cornflour (mixed smoothly to a paste with 3 tablespoons of water).
Cook on slow heat, stirring all the time, till the soup thickens.
Add the pepper and salt to taste.
Cut the cottage cheese into 1cm square pieces and add a few piece to each bowl before serving.
