Vegetarian Fried Rice
Serves: 4-5
Cooking Time: 40 min
Ingredients for won ton
¾ kg rice
2½ tbsp butter
125 gms fresh green peas
125 gms sliced mushrooms
2 tbsp soya sauce
3½ tbsp vegetable oil
100 gms chopped French beans
2 chopped spring onion stalks
1 chopped large onion
125 gms chopped carrots
225 gms chopped cabbage
125 gms sweetcorn
1½ ltr water
1½ tsp salt
Method
Heat the butter and oil and stir-fry the cabbage, carrots, peas, sweetcorn, onion, French beans, mushrooms, onion stalks, soya sauce and salt.
Cook for 3-4 minutes.
Add the rice and mix with vegetables. Fry both over medium heat for 2 minutes.
Add boiling water (1½ liters). Stir and bring to a boil.
Lower heat and place on heavy iron plate (tawa) for 15 minutes with lid covered. Stir once after 8-10 minutes.
Turn off after 15 minutes and leave on iron plate for another 15 minutes.
Serve in a well-heated dish.
