CHINESE NOODLE SOUP
Serves: 4-5
Cooking Time: 20 min.
Ingredients
200 gms Chinese egg noodles
1 ltr chicken stock
1 tbsp soya sauce
2 chopped spring onions
2 cups oil for frying
salt to taste
Method
Deep fry the noodles in hot oil and drain well. Put the noodles in the soup bowls.
Bring the stock to a boil.
Add the chopped onions and cook for 5 minutes.
Add the salt, soya sauce to the stock.
Pour the stock over the noodles in the bowls till the noodles rise to the top.
The soup must be served without any delay if you like your noodles crisp.
